If it's what you really want make sure you eat eggs, milk, cheese, and tofu. nuts are also good.EDIT: oh and I forgot pastas are also awesome aswell as rice. Just a quick really good one: cooked pastas in which you put finely grated Parmigiano-Reggiano (parmesan) and you stir and make it melt, then you add a bit lemon juice. It's really awesome...Show more

Marion Wieboldt: I have been vegetarian for two years now and I still seem to have a hard time trying to come up with healthy and economical meals to make. You should watch food network and omit the meat in recipes that sound good to you. You can also buy meat substitutions at your local Whole Foods. Or you could invest in some vegetarian cookbooks. Congrats on becoming vegetarian! :-)http://www.vegcooking.com/http://www.vegetariantimes.com/...Show more

Hugo Pittari: I was just like you two years ago, I started my vegetarianism, no money to get the fancy stuff, so I had to get creative. It is delicious, you should try it....Show more

Horace Escue: Eating vegetarian does not have to be expensive. How much does a tin of chickpeas for instance cost? Next to nothing. Bean are a very inexpensive way of getting your protein. Also look into the different kind of lentils (moong dal, channa dal), they are very cheap. You can soak them overnight a cook them into a soup, add some veg. stock tablets and some other vegetables if you want to. You can add some spices and/or fresh herbs. You can always freeze small portions of the soup so you always have some protein. Eat the soup with some rice/pasta/bread or salad. You can also add chickpeas (or kidney/white/brown/black-eyed whatever! beans) to amputates that you stirr frye with some massala powder for instance. You add a little water to potatoes and cook them, with the lit on. Then you add the beans and a can oftomatoess. You could also add other vegetables like spinach, string beanss, caulifl! ower, broccolii or any other veg. you like. Add a bit of sugar (two teas! poons or so) and if you want a little (soja) cream. If you want you can add basil or cilantro to that. Instead of the beans you could add tofu, also very cheap. Eat with rice or a good piece of bread.Reallly vegetarian food doesn't not have to be expensive at all. A piece of fish is much more expensive. And do realize and tell your mom that fish is full of poison, as a result of the quality of the water now a days and that the way they 'harvested' just thrown on top of one another and suffocating to death is really inhumane! Maybe that will convince her.Go to your local library or online and find some other easy recipess, okay. Good luck!...Show more
